Devil's Food Cake Mix


This is my favorite mix that I have created so far.....of course that is mainly because it is CHOCOLATE!  ;o)  The other reason I like this mix so much is that even though it is gluten free, it could beat ANY regular gluten-containing cake mix you can purchase in the store as far as flavor and moistness.  It is also so easy to mix up.  Here are the instructions along with some pictures to visually help you along.

You will need:
1 ½ cups water
¾ cup oil
3 eggs
1 teaspoon vanilla
1 teaspoon vinegar

Preheat oven to 350oF.
Grease a 9x13” cake pan and set aside.  (Or grease or place liners in a cupcake pan.)
Combine mix and all ingredients in a bowl and whisk well or beat with an electric mixer until smooth.



The finished batter should be smooth--no lumps.  It will be pretty runny though. 



Pour batter into cake pan or scoop into the cupcake pan (only fill each cupcake hole ½ full).     



Bake cake for 30-35 minutes (or cupcakes for 15-20 minutes) or until toothpick inserted near the center comes out clean or with a few crumbs.



Cool and frost as desired.
